    Stand tall with your arms by the side of your body and your spine straight. Bend the right knee and place it on the left thigh such that the sole of the right foot lies flat on the left thigh. Once you attain balance, slowly raise your arms over the head and bring the palms together (hand-folded position as we do ‘Namaste’), keeping the elbow unbent. Look straight at some distant object as it will help you maintain balance. Now, take a deep breath and hold the posture for a few secs.     Ingredients for eggless cake recipe prepared using cooker (Eggless vanilla cake recipe):

     

    • 1 cup powdered sugar
    • ½ cup of refined oil or unsalted butter
    • 1 cup of all-purpose flour or maida
    • ½ tsp baking soda
    • 1 tsp baking powder
    • ¼ tsp salt
    • 1/3 cup of milk
    • ½ tsp vanilla essence

    Steps to keep your cake tin ready 

    1. Take a 5 to 7 inches cake tin or pan. Avoid using a smaller pan as the batter might overflow during the baking process.
    2. Grease the cake tin with melted butter. Either dust it with flour or use butter or parchment paper to cover its base. And, keep it aside.

    Steps to make batter for eggless vanilla cake

    1. Place a sieve over a bowl. Add 1 cup powdered sugar in sieve(channi).
    2. Add ¼ cup of refined oil or melted unsalted butter to the bowl having sugar. Mix these with the help of a whisker.
    3. Again, place the sieve(channi) over the same bowl and add 1 cup of all-purpose flour or Maida, ½ tsp of baking soda, 1 tsp of baking powder, ¼ tsp of salt. Sieve(channi) all the dry ingredients together.
    4. Add ¼ cup of oil to the same bowl and gently mix until just combined. 
    5. Add 1/3 cup of milk, resting at room temperature, and mix gently until there are no lumps in the batter. But make sure not to over mix.
    6. Add ½ tsp of vanilla essence and mix it with the smooth batter.
    7. Transfer the batter to the cake tin and give a gentle tap to remove air bubbles.

    Steps to bake the cake in cooker

    1. Preheat the cooker with about 1.5 cups of sand for about 4 to 5 mins on high flame.
    2. Place a small hot pot stand and carefully place the cake tin over it.
    3. Remove the gasket (rubber ring) and weight (whistle) from the cooker lid and cover it. Let your cake get cooked on a low flame for about 40 to 45 minutes.
    4. To check if it’s ready, insert a toothpick or skewer (seekh stick) in the middle and check if it comes out clean. If it’s clean, your cake is perfectly baked, but if it’s sticky, then cover the lid back to the cooker and wait for a few more minutes and check again.
    5. Once it is ready, let it cool and take it out from the cooker. 
    6. Transfer it to a plate and remove the butter paper. If you haven’t used this paper, then you can use a spatula or knife to loosen your cake from the corners.
    7. Serve the sponge cake and enjoy it with your family and friends. You can also refrigerate the leftovers.

    • Take ½ cup of powdered sugar in a bowl.
    • Add ½ cup of fresh curd and 1 tsp vanilla essence to the same bowl and whisk with the help of a whisker till everything combines well.
    • Place a sieve over the same bowl. And, add 1 cup of all-purpose flour or maida, ½ tsp of baking soda, 1 tsp of baking powder, ¼ tsp of salt, 2 tsp of unsweetened cocoa powder, and sift the dry ingredients. Then, mix gently to form a chocolaty batter using a whisker. 
    • Add ¼ cup of milk, resting at room temperature, and mix gently to form a lump-free smooth batter. But, make sure not to over mix. In case you find the batter has a thick consistency, you can add some more milk. 
    • Transfer the batter to the cake tin and tap gently to remove air bubbles.

    Lastly, follow the remaining steps to bake the cake in the cooker (as mentioned above).

    Tips on how to use the cooker for baking: 

    1. Take any 5-6 liters aluminum pressure cooker or pan with a heavy bottom as it helps in the even distribution of heat.
    2. Try to use this for baking purposes only for its durability. Since if we keep using it, the material might weaken.
    3. Remove the gasket (rubber ring) and vent weight (whistle) from the lid before using it for baking purposes.
    4. Make sure to use sea salt or sand at the bottom of the cooker as this will prevent overheating. Thus, preventing the cake from burning and the pressure cooker from damaging. While using salt, you need to cover the salt with a plate and use any ring or hot pot stand over it. This stand serves as a base for your cake tin. You can also reuse the same salt for multiple baking tasks.
    5. Avoid washing and rinsing the hot cooker soon after the baking process, as it might degrade the pressure cooker material. So, allow it to cool down naturally before using it again for other purposes.
